How many participants can use audio at the same time?

Using Dimdim - 4 participants (the presenter and 3 attendees) can talk at a time.

Notes
The presenter can control the mic assignment and rotate the microphone from one attendee to another. This is possible as follows:-

From the "Manage" link in the Presenter's Participant Panel as shown below.

2.The presenter can assign audio permissions by
   clicking on the "Audio" checkbox next the the
   participant's name as shown below.

3. Once the attendee Audio is enabled - the greyed out
icon next to her name is shown in red as shown below.

Reason
Every audio stream requires a certain amount of bandwidth and a larger number of mics translates to a higher bandwidth utilization - for the presenter and all attendees.
